We had bags of new potatoes on our grocery shelves this week and I couldn’t help myself. I loaded up and then made this super easy (and oh so very yummy) smashed potato dish.
It doesn’t look like much, but it tastes so good.
Start with some fresh new potatoes. The little guys! Rinse them off, stab them with a fork (pierce their skins) and toss them on a baking sheet (or glass baking dish) and bake in the over, nude, at 350′ for about 30-35 minutes
Add about 1/4 of butter (or margarine) into little chunks on the cookie sheet and “roll” the roasting potatoes to coat them in butter.
Continue baking for 20-30 minutes then remove from heat and SMASH eat potato with a fork. Add a nugget of butter to each potato and dust with salt.
The get all roasted and delicious now! Bake until they are nicely browned (about another 20-30 minutes) and then slide them off into a bowl and EAT!
These are one of the few potato recipes I DON’T need gravy for! They are moist and delish!
- any amount of new potatoes
- 1/2 cup margarine/butter
- dash of salt
- Clean and pierce new potatoes
- Bake at 350 for 35 minutes
- add 1/4 c butter/margarine to pan and “toss” potatoes until coated
- Bake another 20 minutes until browned
- SMASH potatoes with a fork and top with sliver of butter. Dust with salt
- Bake at 350 for antoerh 20 minutes until golden
