It IS ugly, but it’s oh so good.
Easy Beef Stroganoff is one of our go-to dinner in a pan options. It is a comfort food, hearty and filling. And ugly. Gooey, and smooshy and a creamy/grey sort of colour. It doesn’t ooze freshness, but that smooshy-ness is bliss!
As in previous posts, I am nasty with measurements, so just follow your instincts on quantities because, honestly, it doesn’t matter. There is no right or wrong way to make this tasty and delicious.
Ground beef- lots or a little. The more you use, the more you have, right?
1 onion, diced.
mushrooms (a few handfuls, or if your kids are like mine, two cans of whole button mushrooms)
1 -2 cans of cream of mushroom soup
1/2 or so cup of Sour cream
salt, pepper, garlic or garlic powder.
Egg noodles 🙂 Who doesn’t love these slippery noodles!
DIRECTIONS
Sautee ground beef, onion, mushrooms and garlic (or powder)
Add mushroom soup (1 or two cans, depending on quantity of beef) and sour cream
It should become a creamy, yummy mash up of ingredients. DO NOT BOIL. Just warm to simmer (otherwise the sour cream gets really runny) This is it’s UGLIEST stage. But don’t panic… it will be delish! Season (heavily) with salt and crushed pepper.
Let it simmer while you boil the egg noodles (and toast the garlic bread/make the Caesar salad) Serve over the noodles! You can even add a dash of parmesan if you want to be fancy!
