I have to be honest here, I have never baked a cheesecake. It was never my “go-to” dessert, and so I never quite figured out the best way to make one, and make it delicious.
But I do “un-bake” cheesecake all the time, and it is amazing.
We have a family favourite recipe that I picked up from my youthful days and have since been adapting to create new and amazing blends of flavour.
Our Chocolate Mousse Cheesecake. A no-bake, creamy and smooth cheesecake that is fluffy, light and CHEESY without being overwhelming.
Last night we made it again for guests, except this time it was an Irish Cream Mocha Mousse Cheesecake.
And it was DREAMY!
A super simple recipe, using Philadelphia Cream Cheese, whipping cream and a few other key ingredients and you will end up with the most moist and delicious cheese cake in the world.
And no, I am not exaggerating.
In fact, if this cheesecake were to stand on a stage and compete against all the other cheesecakes in the world, it would definitely walk away with the award for “Philadelphia Cheesecake of the Year”

- 1 box Oreo Cookie Crumbs
- 1/2 cup butter
- 3 blocks Philadelphia Cream cheese
- ½c White sugar
- 16 OZ chocolate (any kind)
- 1 package Knox gelatine
- 1/8 cup cold coffee
- 1/8 cup Irish Cream liquor
- 2cups whip cream
- Melt butter with oreo crumbs and press into the bottom of the springform pan. Bake at 350 for apx 10 minutes.
- Mix cream cheese and sugar until very smooth. Melt chocolate and add. Combine gelatine with cold coffee and irish cream over low heat until smooth.
- Add to chocolate/cream cheese mixture and blend until smooth
- Let set/cool
- Mix 2 cups of cream. Combine with the chocolate cheese mixture and add to springform pan on top of cookie crumb base.
- Cool 4-6 hours.
- Serve topped with a dollop of whip cream.
