Summertime mornings are filled with lazy wakings, and long breakfasts as the sunlight streams in and the day awaits.
My kids live for our pancake breakfast, and when we have more time in the summer, we seem to make these beauties more often than normal.
An easy recipe of 2 eggs, 1cup of Flour and 1 cup of milk, they come out as an “almost” crepe consistency . . . thinner than a regular pancake, and thicker than a crepe.
The pancakes themselves are easy to eat, and not “horrific” when it comes to breakfast calories.
It’s the toppings that will do you in.
I like mine with fresh strawberries, a drizzle of maple syrup and (of course) a fabulous swirl of whip cream. The kids go for peanut butter, covered in syrup and (of course) whip cream.
Pretty heavy on the sugar really, but delicious.
