Yesterday I moped and whined about feeling flu-ish. Then I shared my fave ugly food recipe. And don’t worry, I actually have lots of these. I just can’t make pretty food, or pretty crafts . . . I am not Pinterest worthy!
Part two of my Ugly meal was smooshy, yummy, cheesy scalloped potatoes. I am sure there are skilled people out there who know how to make these look pretty, but I find the gooey-er and smooshier they are, they better they taste (and the uglier they look)
Again, I go for ease. I am busy. I have lots of kids, and yes, I cheat. I still call this homemade even though it is made of campbell’s mushroom soup. We all need leeway sometimes, right?
Ugly Easy Scalloped potato recipe
Take a couple potatoes. Cut the icky bits off. Hard Boil them (that means boil them until they just start to soften)
Take em out of the water and slice them thinly (my are never all the same thickness, I just can’t master that)
In a bowl, mix mushroom soup, and lots of cheddar cheese and a pinch of salt and pepper. I like lots of pepper . . you may not.
At this point I also look in my fridge for “other stuff” This time I added in some leftover chicken gravy. Sometimes it is a bit of left over veg . . whatever – cooking should be creative, and we have no intention of making this a work of art.
Mix the good. Layer the potatoes in a baking dish. Add the goop on top. Do a couple layers if you want. Top with more cheese. Cause cheese is good.
Bake, covered in tinfoil until it bubbles and smells yummy (40 min??, I never know) Take the cover off at the end and let the cheese get kinda crispy!
Eat it. And then eat it again tomorrow all mixed up and ugly.
