It is our first weekend here.. well, real weekend.
We played, we unpacked and we started to settle in. We are getting in our groove, we are figuring things out, routines, schedules, groceries… all the fun things.
And, I finally have time to cook again. Well, cook and bake… or mostly bake!
Part of wanting to live here (rurally) is to get away from the city chaos. To turn off the tv and have enough to keep the kids occupied and outside. And for me, to give me space to create a life.
No, not get pregnant (it isn’t clinically possible, and god forbid it happens again!)
But to create a life. This goal of ours is to have a life full of fun, laughter, projects and adventure. It is not to escape responsibility but to appreciate it. It is to have the time to enjoy the moments in the day and not be so overwhelmed by the chaos.
And it is already working.
Granted, the loft is still filled with boxes, and I still don’t have a dresser, but I baked again.
I spent the morning messing with our breadmaker (yes, I understand this is cheating, but this I am ok with) and pulled together some yummy muffins and cookies for the kids lunches.
A house filled with scent is a magical thing to me. It warms the soul and creates memories.
And to fill this loaner home with our favorite smells, not to mention kidlet bellies when they all came out of the oven, was a morning well spent.
And it is getting me closer and closer to the rhythm I want to be in.

Apple Streusel Muffins via Simply Love
A family cookbook, by Ginny Love
Preheat to 375, butter muffin tins (apx 9..I did 12)
Make Streusel Topping
Put 1/4 c Flour, 1/4 c Brown Sugar & 1/2 tsp cinnamon in a bowl. Cut in 2TBS cold butter w/ pastry cutter. Add 2 TBS chopped pecans (if you want… I left them out) Set aside.
Make Muffins
Combine 1&1/2 C Flour, 1tsp baking powder, 1/2tsp baking soda, 1tsp cinnamon, 1/2 tsp allspice & 1c brown sugar in bowl.
In separate bowl beat 2 eggs, 1/4c melted and cooled butter, & 1 c buttermilk (I didn’t have any so I did 70/30 1% and whipcream… faking it)
Add chopped apple (1 large apple, peeled, cored & diced)
Poor wet into dry and mix gentle until just combined. Spoon into muffin tins and press apx 1TBS streusel topping onto each. Bake about 25min until golden.
Eat… and then make more!
