We do these twice, because they are THAT good.
Ugly, but delicious.
And trust me, when you are mixing them up, they ARE ugly, but as they bake, they get their good looks back!
Creamy, cheesy, bacon-y… delish. Amazing re-heated on the bbq the next day, and we may have even (possibly) eaten them cold in the morning.
And easy. Because ALL these recipes are easy.
And even though they are UGLY, you can bring them out in public. They taste good enough to share with company!
Bake Big “baking potatoes” in the oven until soft. (4)
When cooked, scoop out the insides. Mash them up. (like with a masher)
Add in about 3.4c of sour cream. I use the full fat stuff… because when we indulge I prefer to go all the way.
Dice up some green onions, shred in 1c of cheese (any kind) and toss in some sautéed and diced bacon bits.
Add salt and pepper (cause we always do that!)
Stir it all together, and scoop it back into the empty potato skins. Top with a bit more grated cheese.
Bake again, at about 350. until warm and melted.
EAT. DEVOUR. CONSUME with PLEASURE!
