First off, I don’t know why we call them German (fried) Potatoes.
Secondly, they are ugly. And they are delicious.
As you know, I believe that Bacon is a seasoning, not a food, and that everything with bacon just tastes better.
And these babies are loaded with it.
Easy peasy recipe, and our familiy devours them. And cheap and cheerful is the new black, and we all know you can haul home a big ole bag of potatoes for just a few bucks.
Start by hard boiling a few potatoes (one or more per person) Be generous with the potatoes. You can’t have enough
Throw them in a pan with a few rashers of bacon, sliced, and a whole sliced onion.
It doesn’t matter what “type” of potato you use (this isn’t fine cooking!) but if it is a thin skinned one, I keep the skin on. The kids like it . .(weirdos)
Throw some EVOO on top. (Adding EVOO makes this dish “company appropriate” by the way)
Sautee the whole mess.
I say “sautee” here because it is nicer than fry. But in all truth you are frying that baby up.
Now, pour wine, and be patient. This takes about as long to cook as a pan full of hashbrowns. Call it 45 minutes or so, and note it is pretty tricky to over cook this. You want it to end up being a mess of fried potatoe, bacon and onion. And you will LIBERALLY apply salt and pepper.
It ends up looking ugly. But oh, it tastes so good. We served this batch up with some BBQ Canadian Chicken and green beans.
And the best part,we had leftovers. And tomorrow morning we are going to reheat it and throw a fried egg on top… an egg straight from the hen even!
